When you're craving for the smell of freshly cut summer grass, or the soft touch of the salty ocean breeze on your face, or the tranquilizing views of the colorful butterflies seated on the vibrant florets; but when you open your bedroom windows, all you can see are the banal views of the plodding and monotonous snow all around you, then pick your arse up (pardon my French) from the deep dungeons of your comfortable blanket, and pick your spirits up by making this lip smacking, peppy and zippy drink! ~ Pina Colada.
This is hands down my favorite cocktail that exists. It's sweet, it's creamy, it's velvety, it's rich, it's perfectly spiked, and it looks so so pretty in those carved out pineapples, with those red cherries sitting proudly on the top.
So without further ado, I'm going to jump right in!
First things firsts, you need two major things to be able to make it perfectly!
The Pineapple Corer, to carve out the pineapples, we use this.
Coconut Cream, and NOT Cream of Coconut (No they are not the same!, coconut cream is unsweetened, while cream of coconut is sweet and syrupy)
We're making this drink for four people, and so if you want each person to have the drink in a whole pineapple then, you need four pineapples, otherwise one pineapple is enough.
Also if you're able to complete Step 1 and Step 2, a day before, it'll help improve this drink a lot! We need that slushy texture of the drink, which is possible only when Step 2 is performed a few hours before you make the drink, if not a day.
Ingredients :
White rum
Coconut cream. You can also use coconut milk instead of coconut cream. In that case, store the coconut milk in the freezer overnight. If you have Cream of Coconut then SKIP agave syrup.
Agave/Simple syrup
Lime Juice
Ice cubes
Cherries for garnishing
Step 1 : Carve out the pineapple using a pineapple corer.
Step 2 : Save the pineapple pieces in a box and freeze it.
Step 3 : It's party time!! We made this drink at my niece's third birthday party, of course only for adults!
Take out the pineapples from the freezer and let it sit out for 2 - 3 minutes, and then in a blender, add five to six pieces of the frozen pineapple.
Step 4 : Add the liquor
White Rum - 1 cup
Coconut Cream/Frozen Coconut Milk/ Cream of Coconut - 1 cup
Lime Juice - from one lime
Agave Syrup / Simple Syrup - 1 oz. (Skip if using Cream of Coconut)
7 - 10 ice cubes
Also see if the pineapples are too sweet, then adjust the lime and agave accordingly.
Step 5 : Blend it!!! and serve. Add some cherries on the top and relish!
